Juicy Roasted And Stuffed Chicken

About 1.5kg whole chicken
1 small to medium carrot, well chopped
1 onion, roughly chopped
1/4 to 1/2 cup fresh green beans or green peas
fresh chilli to taste {optional}
For the roast chicken
About 1.5kg whole chicken

Salt to taste
1 teaspoon ginger paste
1 teaspoon garlic paste
50 g melted butter
1 tablespoon lemon juice
1 teaspoon tandoori powder
1/2 teaspoon paprika powder
1 teaspoon chilli powder or to taste
1/2 teaspoon Coriander powder
1 garam masala
1 teaspoon ginger powder
1 teaspoon garlic powder
2 hard boiled eggs

Ingredients for rice

1 cup of rice
11/2 to 2 cups of water to cook your rice
Salt to taste
1 teaspoon spice for rice {please check this in the video, if you want to see how it looks like}


A} Wash your chicken very well and drain all the water or you can use a kitchen towel roll to remove the excess water and put it in a roasting dish

B} Mix all the spices for chicken together in a plate, apart from butter, ginger paste and garlic paste

C} Marinate the chicken with ginger paste and garlic paste, the followed by all the spices apart from all the ingredients for rice and melted butter. Don’t forget inside the chicken.

D} Then drizzle over the lemon juice and rub it nicely all over the chicken.

Please note — It’s better to marinate the chicken night time and let it sleep over in the fridge, and then roast it in the next day

E} Preheat the oven to 200C/180C Fan/Gas 6.

F} Boil 2 eggs and set aside

G} Now boil the rice with water, spice for rice and salt. Cook it until it’s well done. Cook this rice just like you would normally cook your rice for dinner

H} Now start stuffing your chicken with 2 tablespoons of cooked rice at a time, 1 table spoon of mixed vegetables at a time and 1 boiled egg. Repeat this process until the chicken is well stuffed or is full and there is no space in the inside

I} Cover with the foil paper only where the stuffed things are showing. This will prevent all the stuffed things to not get dry with the oven heat. As seen in the video.

J} Now tie together the legs as seen in the video

K} Roast for 1-1ΒΌ hours, or until the chicken is cooked through. (The chicken is cooked if the juices run clear when a skewer is inserted into the thickest part of the thigh meat. If the chicken is not cooked through, return to the oven for a further 10 minutes and check again.

L} Now grease the whole chicken with melted butter, this is going to help your chicken to be softer. Do this like 10 to 30 minutes before the chicken is well cooked and it’s still hot

M} Remove the chicken from the oven and set aside, coverer the whole chicken with a foil paper, to rest for 10 minutes.

N} To serve, carve the meat or just cut it in the middle as seen in the video and place it on serving plates. Drizzle broth from roasted chicken all over rice and serve same alongside with any sauce of your choice.
