My Mother In-Law Delicious Curry: Turmeric And Coconut Curry

Coconut and turmeric curry

Let me introduce you to one of our family favourite dishes, this recipe is from my beloved mother in-law. She is such a wonderful and beautiful person inside out, in addition to that she is so amazing in the kitchen and her food is very delicious Mashallah, oh yeah finger-licking, definitely she is the best! I always get excited going on holiday/ visiting her coz I know for sure I will learn few yummy dishes from her. This dish is a holiday must-have for my husband and I. You should try it and I am sure you will fall in love straight away!

600g Chicken {Washed and chopped into medium to large pieces}
3/4/ to 1 cup fresh Tomatoes, finely chopped
1-2 teaspoon Tomato puree
1 1/2 to 2 medium Onions {chopped}
1 teaspoon Ginger paste
1 teaspoon Garlic
1/2 to 3/4 cup thick Coconut milk
Lemon Juice {from 1 to 11/2 lemons}
1 to 1 1/2 teaspoon Turmeric powder
1/2 teaspoon Garam Masala
2 to 4 potatoes, peeled and cut into quarters
1/4 cup Carrots {chopped into very small cubes}
1/4 cup Bell peepers / Capsicum
Green / red chillies {chopped} to taste {Optional}
Chilli powder to taste
Salt to taste
50ml cooking Oil

A} Blend together half chopped onions, ginger, garlic and 1 teaspoon of turmeric powder. Set aside
B} Use more water to boil this chicken, you will need to use about 3 to 4 or more cups of water, the same water /soup will be used to cook Turmeric coconut rice later. Boil the chicken with salt to taste and 1/2 teaspoon of garlic, boil it until half way cooked, and set aside {please don’t over boil it}.
C} Now heat the oil in a saucepan over medium heat.
D} Add the other half of onions {not blended one}, fry until golden brown
E} Add chopped carrots, bell peepers / Capsicum, the blended mixture of onions, ginger, garlic plus turmeric, chilli powder, garam masala and fresh chillies. Continue stirring and frying until the flavours have mixed well for about 1-2 minutes, {it should develop a nice aroma}
F} Add fresh tomatoes, tomato puree and cook for 2-3 minutes
G} Now add about 3/4 to 1 cup of chicken soup from the boiled chicken,
H} Add potatoes stir well, bring to the boil, cover and cook till it gets thick. Make sure to stir frequently to avoid burning it
I} Remove the lid; add the coconut milk and lemon juice
J} Add the boiled chicken, continue to cook for 5 minutes or until it gets thicker as seen on the photo
