Stir Fried Liver

500 to 600g lamb’s liver, cut into strips
Almost 1/2 pickled jalapenos
Fresh red chilli
Chilli powder to taste {optional}
Almost 1 cup Mixed belle peppers, cut into strips
Salt to taste
1 garlic clove, paste
1/2 teaspoon ginger powder
1 teaspoon garlic powder
100g spring greens
1 tablespoon olive oil

A} Clean your liver and drain all the water
B} Put it in a pot; add salt, ginger paste, garlic paste and 1/2 to 3/4 cup of water.
C} Boil it for 4 to 5 minutes and drain all the excess water in the pot
D} Heat a tablespoon of the oil in a large non-stick frying pan
E} Add the liver and stir fry over a moderately high heat, then add ginger and garlic. Stir it nicely. Tip the fresh chillies, mixed belle peppers, pickled jalapenos and stir it nicely. Fry it only for 3 minutes until light brown. Don’t cook for longer or the liver will become rubbery. Remove to a plate, leaving the juices in the pan
Serve immediately.
