Sweet Plantain Recipe

Ndizi Mbivu

Ingredients:
2 big plantain/ndizi mkono wa tembo
less than 1/2 cup sugar or to taste
about 3/4 water for boiling your plantain
1/4 teaspoon cardamom powder
1 cup thick coconut milk and 3/4 cup light coconut milk if you are using fresh coconut milk, but if you are using coconut powder then 3 tablespoons coconut powder and 1 and 3/4 cups water}
1 tablespoon custard powder— optional, {custard helps to enhance the colour and tasty of your plantains}
1/4 raisins {Optional}

Method:
A} Peel and cut the plantains in the middle as halves, then slice them in centre to make 4 quaters from 1 plantain
B} Remove the centre seeds
C} Put them in a pan, if your pot tends to burn food, line up banana peels first and then place bananas on top
D} Add enough water, sugar, cardamom powder and cover the pot. Simmer until they are very tender.
E} Meanwhile prepare custard sauce, put water in another pot and stir in the custard powder straight away. Stir constant to avoid lumps. Once you have a smooth and beautiful custard sauce then stir in coconut powder. Keep on stirring until the coconut powder is well mixed and no lumps in the pot [As seen in the video]
F} At this stage is when you are adding in coconut plus custard in a plantain pot. Drain the water if needed, and add the light coconut milk. Simmer on medium heat until the coconut milk thickens and reduces. {you do this process If you are using fresh coconut, homemade}
G} Adjust sugar to your taste. Then finally add the heavy coconut milk {if you are using fresh one}, OR add in the coconut and custard sauce we cooked beforehand and simmer again on a low heat until it thickens without stirring
H} Turn off the heat and let the plantains cool slightly.
Serve and enjoy!
