Strawberry Jam French Toast Roll Ups

Makes 8 French toast rolls
8 slices white bread (soft & fresh)
1/2 cup jam {If you want you can use jelly, nutella, peanut cheese etc}
2 eggs
1 teaspoon milk
1/4 cup sugar
1 tsp cinnamon
1 tablespoon butter / oil for frying {or mix together}


A} Rinse, hull and roughly chop the strawberries
B} Put into a bowl and add 1 tsp sugar. Toss to coat.
C} Flatten the bread slices with a rolling pin and trim off the crusts
D}Spread about a teaspoon of the jam along one edge of the bread.
E} Top with about a spoonful of strawberries.
F} Gently but tightly roll up the bread around the strawberries and jam.
G} Repeat the process with the remaining bread.
H} In a shallow bowl, whisk the eggs with the milk, remaining 1 teaspoon of sugar and a pinch of cinnamon.
I} Preheat your non-stick pan or electric griddle over medium heat.
J} Add a bit of oil and a pat of butter.
K} Coat the rolls in the egg mixture and place seam side down.
L} When browned, turn a quarter turn and continue until all sides are cooked and browned nicely.
M} Remove to a plate, dust with more powdered sugar, if desired
