Simple Banana and Carrot drop scones

Makes about 10 – 12 small pancakes, {recipe can be easily be doubled or tripled to make more}

2 ripe bananas, mashed
2 eggs, whisked
3/4 cup of grated carrot
1/4 cup almond butter
100 g Plain flour {whole-wheat or white}
1 to 1 & 1/2 teaspoon Baking powder
100 – 110 ml Milk (any kind) depending on your preference {how thick / thin your mixture you want it to be}
1 teaspoon cinnamon
1 tsp pure vanilla extract
1 -2 teaspoon sugar or to taste
A pinch of salt
Cooking oil (for cooking)

A} Grate your carrots, 3/4 cup total and set aside
B} Mash the 2 bananas with a fork in a medium bowl
C} Now whisk the 2 eggs separately, and then add to the bananas
D} Add the flour and baking powder bit by bit while stirring
E} Add milk and whisk together by using a rotary whisk. Make sure there are no lumps
F} Stir the bananas and whisked eggs to blend
G} Add the almond butter, cinnamon, vanilla and stir well
H} Fold in the grated carrots
I} Heat a shallow layer of cooking oil in a large frying pan or heat a non-stick pan
J} when the pan is hot, drop individual tablespoons of batter into the pan – you will probably be able to do 4 – 6 at a time, depending on the size of your pan and the spoonfuls. Alternatively, make any other shapes / sizes, e.g. letters, hearts, squares etc
K} When little air bubbles appear all over (60 – 90 seconds), flip them over and cook the other side for 30-60 seconds.
L} If you want to keep them warm while cooking the rest, put them in the oven on a low heat, or on a warm plate covered with a clean tea towel.
M} Serve hot with fresh fruits or raw maple syrup / honey
