Maamoul Date Filled Arabian Cookies

A Tool that has been used to form maamoul’s shape

Ingredients:
FOR THE DOUGH
2 cups Semolina flour
1 ½ cup all-purpose flour
1 to 1 teaspoons vanilla
3/4 to 1 cup butter melted
1/4 vegetable oil
2 tablespoon oil
1 and ½ teaspoon baking powder
3/4 to 1 cup sugar
1/2 to 1 cup milk {add more if needed}

FOR THE FILLING
500g cup pitted dates
1/2 cup nuts {gridded, don’t make smooth powder, course will be best}
1/4 to 1/2 cup tablespoon butter
¼ teaspoon cardamom powder
1 tablespoon cinnamon powder

Method:

TO MAKE THE DOUGH
A}Mix semolina flour, all purpose flour, baking powder and sugar, mix them nicely.
B} Now add salt, vanilla, until the vanilla with milk and oil, keep aside
C} Mix the oil and butter, then melt it in a microwave or on the stove and set aside
D} in a bowl add all the dry ingredients, salt, and vanilla and mix well.
E} Now pour the mixture of the butter {butter and oil} into the flour and mix until well combined.
F} Add the milk and knead for at least 5 minutes.

TO MAKE THE FILLING
G} In a saucepan, add all the ingredients and stir on medium heat. Stir it and try to mush it as seen the video. The date will soften and will form into dough like texture. This process and depending on the type of dates you are using might take 3 minutes to four minutes.
Now remove from the stove and let the mixture cool completely then form equal balls.

MAKING MAAMOUL
H} Preheat oven to 180C/350F
I} Put the parchment paper on a baking tray or grease a baking tray with butter and keep aside.
J} Form equal balls from the dough previously prepared
K} Take one ball and flatten it slightly in the palm of your hand.
L} Place a ball of date in the centre and close the dough forming a sealed ball.
M} Place the ball in a mould, press it gently until the surface is even.
N} Slam the edge of the mould on the palm of your hand to release the dough from the mould
O} Place the Maamoul on the greased baking sheet.
P} Bake for 20 minutes or until they are well cooked, don’t burn them. They should look light not dark brown {they should look slightly baked}
Q} Remove them from the baking tray and put them on the wire to get cold
R} When they are cold dust with confectioners’ sugar if you wish
