Chinese Sausage And Vegetable Fried Rice

2 cups basmati rice
3 tablespoons oil or to taste
1 to 2 carrots finely chopped
Onion sliced to taste
3 to 4 sausages, boiled and pat dry {sausages of your choice}
1 spring onions finely chopped
100 grams peas boiled
2-3 red chopped chillies {optional}
1 teaspoon ginger finely chopped
1 teaspoon garlic finely chopped
1 teaspoon soya sauce {optional}
Salt to your taste
2 beaten eggs

A} Pick, wash and soak the rice in enough water for 10-15 minutes and drain.
B} Boil water, add rice and little salt.
C} Cook uncovered on low heat till rice is tender.
D} Take care not to overcook the rice, each grain of rice should be separate.
E} When rice is done, drain and set aside.
F} Heat oil in large pan and stir fry all the chopped vegetables and sausages.
G} Cook for 3-4 minutes.
H} Take care that vegetables are not overdone, they should be crisp.
I} Mix salt and chillies, all to taste.
J} Add the cooked rice and mix well.
K} Now add the beaten eggs and mix the soya sauce to it.
L} Cook the Chinese fried rice for 2-3 minutes and serve hot.
