Sausage Rice With Veg {Carrots & Eggplant} or Wali Wa Sausage, Karoti Na Bilingani

For Sausages:

4 – 5 sausages
Fry first and then chop/slice them into pieces
Set aside

For Eggplant

1. Heat oil in a pan

2. Add chopped onions, fry for 2 minutes on medium heat.

3. Add ginger and garlic, fry for a minute

4. 2. Add chopped eggplant, chili powder and salt. Stir and cook covered for about 3-4 minutes. Stir in between and cook on medium to low heat.

5. When oil starts oozing out, remove them from the heat and set aside.

For Rice

2 cups rice {washed and drained}
Onion to taste
1 teaspoon ginger paste
1 teaspoon garlic paste
1/2 tsp turmeric powder
1/4 tsp coriander powder
1 tsp curry powder
1/4 tsp ground cumin
1 cube stock {vegetable or chicken}
1 cup Carrots peeled and chopped
water enough to cook the rice

A} In a pot, add some oil and sauté the ginger/garlic paste.
B} Once the paste starts to change colour, add the chopped onions and stir.
C} Add the spices and continue cooking.
D} Now add carrots and water, salt, cube stock and let it come to a boil.
Once it comes to a boil, add the rice, cook until the rice is cooked to your perfection (if you like it a bit mushy or with single strands of grain) and make sure the liquid has reduced.
If the rice is ready and there is still some liquid left, you can drain away the liquid.
E} Now layer the rice in another pot, first layer the rice, some eggplant, then the fried sausages, then the rice again and keep repeating until you finish all your ingredients, the top layer should be the rice.
F} Bake the rice in the oven at 350 degrees until it is fully cooked.
G} Before serving, mix well so that all the rice gets an even coating of the eggplant and sausage mixture, then place on a serving dish / plate
Serve the rice with your favourite salad
