Homemade Salt & Black Pepper Potato Crisps Recipe


600 gm
White potatoes
Salt to taste
Black pepper to taste
Cold water {ice cold water works best}
Oil for deep frying

A} Wash and peel the potatoes
B} Slice them thin and as evenly as possible, the more even the slices the more uniformly cooked they will be. If you have a crisp slicer then use it, it’s quicker and slices are more uniform.
C} Place the slices in a container of cold water for about 10 minutes. This will remove the extra starch in the potatoes, making them super crispy later.
D} Drain and lay the slices out on a cloth to blot out excess water. Make sure they get completely dry.
E} Heat oil in a pan and fry the crisps. Do not over crowd your frying pan, do this a little at a time. Keep the heat on medium during frying so that they don’t burn around the edges.
F} Remove from the oil and blot on tissues
G} Sprinkle with black pepper and salt {all to taste}.
H} Serve with any dip of your choice like chutney, melted cheese, salsa etc


Tip for storage —> Store in an airtight container
