Best And Simple Chicken Pilau Rice


3 cups of basmati rice (uncooked)
1 Teaspoon gram masala powder
1 cinnamon stick (or a few pinches ground cinnamon)
Few cardamom pods (or a few pinches ground cardamom)
1 teaspoon garlic paste
1 teaspoon ginger paste
1 tablespoon cumin seeds
1 medium chopped onion
Potatoes {peel and chop them into halves if they are small or into quarters if they are big}
Oil for cooking
Salt to taste {don’t put too much, remember you are going to use water from boiled chicken and that water is already salted}

For Boiling Chicken
1 big whole chicken
1 teaspoon ginger paste
1 teaspoon garlic paste
Salt to taste
Oil for cooking

A} Peel and chop potatoes, put them in a deep dish with enough water to cover up potatoes, and set aside
B} Wash and cut your chicken into pieces, set aside.
C} Wash the rice, drain, and set aside.
D} Now put this chicken in a deep pot
E} Add ginger paste, garlic paste, salt and enough water {you will use this water to cook your pilau rice}. Bring it to boil.
F} Heat oil in another deep pot
G} Fry onions and potatoes until they are light brown, if the oil is too much remove some to reduce cholesterol
H} Add garlic and ginger, continue stirring and frying until the flavours have mixed well
I} Now add all the spices including cumin seeds, cardamom pods / seeds, cinnamon stick, clove seeds continue stirring and cook for a minute {it should develop a nice aroma}
J} Stir in washed rice, garam masala and add boiling water from the boiled chicken. Stir it thoroughly
K} Cook for about five minutes, then cover the pot and simmer for a few minutes, stir occasionally
L} Check every few minutes to see if more water is needed and add water as needed. Stir as liquid is been added.
M} Cover the pot and continue cooking over low heat for 8 to 10 minutes
N} Now add cooked boiled chicken {if you don’t want to fry it} or fry your chicken in a deep pan until light brown; as seen in the video
O} Cover the pot again and continue cooking over low heat for more 15 or until the rice is well cooked. All the moisture should be absorbed by rice.
P} Place the rice in a serving dish
Q} Serve you chicken pilau rice while still hot with some salad and chilli sauce of your choice
