Perfect Lamb Curry Restaurant Style

Ingredients:
1 kilo Lamb, chopped into medium pieces {you can use any of your favourite meat}
1 tin of tomato or use 1 cup fresh chopped tomatoes {about 6 tomatoes}
1 big chopped onion
3/4 to 1 chopped bell pepper {you can use any colour or mixed}
1 tablespoon chopped coriander
1 teaspoon chilli powder
1 teaspoon curry powder
1 teaspoon garam masala powder
1 teaspoon paprika powder
1/2 cumin powder
1 teaspoon ginger paste
1 teaspoon garlic paste

Method:
A} Heat a large pot / saucepan and add one tablespoon of the vegetable oil and then the lamb
B} Add ginger and garlic and stir it, cover your pot and cook over a high heat for 4-5 minutes
C} Add all spices and stir it really good, cook it for about 1 to 2 minutes
D} Now add onions and bell peppers, stir it, cover your pot and cook for about 2 to 3 minutes. Stir it again and continue to cook it
E} At the bottom of the pot let it brown a bit {don’t horribly burn it lol}, this is going to enhance the aroma and the tasty of the meat, in addition to that the cooked lamb colour will look perfect. Scraping the bottom of the pan to deglaze and release any residue at the bottom of the pan.
F} Add tomatoes and make sure to stir well as seen in the video. Cook for a further another 5 minutes
G} Now add coriander leaves and water, make sure the water covers all the meat. you want your lamb to be very tender, heat to bring to a simmer. Cook until all the meat is very soft and the liquid has thickened. Stir well, scraping the bottom of the pan to deglaze and release any residue at the bottom of the pan. Continue to cook on a low to medium heat for about 45 to 1 hour or until the lamb is tender and cooked through.
Serve with anything like, chapatti, naan bread, rice, maandazi etc
