Ingredients:
Serves 3 – 4
3 cups pasta of your choice
500g boiled minced meat
3- 4 hard boiled eggs
200g to 300g chopped Asparagus or to taste {you can use any vegetable of your choice}
1 teaspoon Curry powder
1 Teaspoon Red chilli powder
½ Teaspoon garam masala 1/2 Teaspoon paprika {optional}
1/2 Teaspoon Ginger paste
1/2 Teaspoon Garlic paste
1/4 to 1/2/ teaspoon finely crushed cumin
½ medium Chopped Onion or to taste
1/4 to 1/2 finely crushed coriander
salt to taste
1 green chilli or to taste
1 to 2 teaspoons red chilli flakes or to taste (optional for a spicier version)
Method:
A} Boil the pasta as per packet directions with some salt and a teaspoon of oil
B} Drain in a colander and set aside.
C} In a large pan, heat the oil on medium
D} Add the chopped onion, ginger & garlic, 1 green chilli and fry for a few seconds.
E} Add in the chopped tomatoes
F} Cook until all the water from the tomatoes dries up
G} Add the garam masala, crushed cumin, red chilli flakes and salt
H} Now add the boiled minced meat and a bit of water about 1/4 cup to 1/2 cup, bring to a boil for about 2 minute
I} Add the chopped asparagus, reduce the heat and keep on low heat, covered & cook for 3 minutes or so, stirring occasionally
J} Now add the boiled pasta and hard boiled eggs into the minced meat, mix together.
K} Cook for 2 more minutes
L} Transfer to a serving dish.
M} Slice in the middle your boiled eggs {optional}
N} Serve with some salad and any kind of bread {optional}
