Homemade Vegetable & Prawns Muffin Pizzas


For filling {or filling of choice}

150g Prawns {Cook it to your taste and set aside}
100g Mixed vegetables chopped into small pieces {eggplant, mushrooms, broccoli and spinach}
2 small capsicum, red and green if possible, grated or chopped finely
1 tablespoons sweet corn
1grated carrot
1small onion, chopped finely
1-2green chillies, chopped
1/2 teaspoon garlic paste
1 teaspoon chopped coriander
Salt to taste
1 Tablespoon butter
1/2 teaspoon garam masala
A pinch of tandoori masala


1} Heat the butter in a non-stick pan, add the onions and stir fry until they’re translucent. Do not brown them.
2} Add the chopped capsicum and grated carrot, stir-fry for about 5mins until they start to soften.
3} Add the raw chicken pieces and keep stirring until they start browning.
4} Add the chillies, garlic, salt, garam masala, tandoori masala and sweet corn. Sauté until the chicken pieces become tender and well-done. If the mixture sticks to the pan and the mixed vegetables, add a tablespoon of water and cover until ready.
5} Make sure that the mixture is completely dry. Finally, add the coriander and mix well and switch off.
6} use a wooden spoon to smash the small pieces of mixed vegetables so that they become shredded {Optional} OR just leave the way it is
7} Adjust salt/chilli to your taste.


For pizza sauce
3 tomatoes
1green chilli
1small onion
1carrot, grated
1 tablespoon oil
1/4 teaspoon garlic paste
1 tablespoon tomato puree
Salt to taste
1 teaspoon sugar
A pinch of tandoori masala


1} Blend the tomatoes, capsicum, chilli, onion and carrot with a bit of water until smooth.
2} Heat the oil in a pan, and then add the garlic paste, followed by the tomato paste.
3} Once that’s cooked for a couple of minutes add the blended mixture and simmer.
4} Add salt and sugar followed by a bit of tandoori masala {spiced according to your taste}.
5} Let it simmer until thick and all the water is gone.
6} Taste and adjust if needed. Then use accordingly!
Other ingredients
1 cup mozzarella and cheddar cheese (or as needed)
Extra toppings —> prawns, red and green capsicum, green chilies, and sliced onions {optional}


For Pizza Dough
2 1/2 cups plain flour
1 1/2 teaspoons instant yeast (Use 2 teaspoons for colder climates)
2 pinches baking powder
1 1/2 teaspoons salt
1 1/2 teaspoons sugar
5 tablespoons oil
Warm milk with a bit of water for kneading

A} Mix all the dry ingredients and the oil, then slowly start adding the warm milk a little at a time. Get it to soft dough {the softer the better}
B} knead it very well for at least 8 minute or more if possible.
C} Dab a touch of oil all over the dough, then cover it and place it somewhere warm.
D} Leave it to rise to double its size, takes about 30 minutes to an hour depending on the weather.
E} Once ready, punch down the dough and then divide it into 12 equal balls.
Grease the cupcake pan lightly with oil.
F} Roll each dough ball out into a circle of about quarter inch thickness
G} Gently place it in the muffin hole of the pan, patting it gently to fit the shape. Repeat with the rest of the balls.
H} Next, spread a light layer of pizza sauce in each cup
I} Add the fillings or the one you plan on using, just make sure you are not suing soggy filling, plus some of extra toppings).
J} Scatter some cheese over the filling and add some prawns and green chilies over the top of each muffin.
K} Allow the pizza muffins to rest and rise for 20 minutes
L} Preheat the oven at 180C and bake them for about 15 minutes or until the cheese is bubbly and the dough is cooked through.
M} Remove the pizza muffins from the pan and allow them to rest on a wire rack to cool slightly before serving.
