Simple And Yummy Carrot Potato Fritters

Potato And Carrot pancakes

2 large potatoes (roughly 3/4 lb, finely grated)
2 large carrots (finely grated)
1 small to medium red onion (finely chopped)
1 teaspoon or to taste fresh parsley (chopped) Optional
1/4 cup skim milk
2 eggs (lightly beaten)
5 – 6 tablespoons flour
1/2 teaspoon baking powder {Optional}
1 teaspoon ground cumin
3 cloves garlic, crushed or finely minced
Salt to taste
Black pepper to taste

A} Rinse, peel and grate potato in cold water, squeeze out as much liquid as possible & pat dry.
B} Combine all ingredients, add salt & pepper as to taste
C} Mix well
D} Drop 2 tablespoons of mixture for each pancake into a large, lightly greased, non-stick frying pan
E} Cook over med-heat for about 5 min on each side or until brown & carrot is tender.
F} Repeat cooking process for remainder of mixture Serve warm, put them in the microwave for a minute or 2 to reheat before serving.

NOTE: This mixture will be wet despite how careful you are to remove excess liquid, but do not panic. The pancakes will cook & crisp nicely. You can use a strainer to make it easier for yourself
