Egg Kebabs



10 eggs {8 to be boiled and 2 leave them fresh for later use}
2 tins of tuna or a good size of fish steak {remove all the bones} OR you can use shredded chicken, minced meat
1 medium to big carrot {grated}
1 teaspoon ginger paste
1 teaspoon garlic paste
1 teaspoon chilli powder or to taste
1/2 cumin powder
2 tablespoons coriander leaves
Salt to taste
2tablespoons of bell peppers
1teaspoon lemon juice
2 tablespoons cooking oil

A} Boil eggs and remove egg shells
B} Now cut them in the middle, be very careful not to destroy the yolks in the centre.
C} Separate the egg white from the eggs yolks and set them aside in different plates as seen in the video
D} Mash all the yolks and set aside
E} Boil the fish with little salt, let it cool and then remove all the fish bones
B} Heat 1 to 2 teaspoon of oil in a pan and sauté the carrots, ginger paste, garlic paste, bell peppers and lemon juice. Cook it for about 3 to 5 minute on a medium heat
C} Add in the cooked fish and cook it for another minute or so.
Now remove it from the stove, at this stage taste it if there’s enough salt and add more if needed. Allow it to cool for 3-5 minutes.
D}Now stir in the mashed yolks and mix well with a fork or cooking stick
E} Divide the mixture into small equal size and shape them into small balls that will fit on the egg holes
J} Beat fresh eggs really well
K} Heat the oil in a pan
L} Dip each of the kebabs / jicho la make mwenza in the beaten eggs
M} Deep fry them until they become golden brown in colour
N} Remove from the pan and put them on the kitchen roll paper to drain the excess oil
O} Serve with your favourite sauce or chutney

1} to avoid the kebabs from breaking, make sure the oil should be really hot before you start frying them
2} Make sure you leave space in between them when frying them (don’t put them close to each, if possible you can fry them 2 or 3 at a time
