Rice Flour cookies With pineapple Flavour

4 cups Flour
1 cup rice flour
1/2 cup custard powder
2 tablespoons powdered milk
250 mm liquid milk
1 and ½ cup Castor sugar
½ cup Butter {blue band)
½ cup ghee
5 egg yolks
2 whole eggs
1 teaspoon Food colour pink
1 Teaspoon Vanilla
1 teaspoon baking powder

A} In a large bowl, mix together the butter, ghee and sugar, mix properly for about 10 minutes
B} Add egg yolk only and mix for another 2 to 3 minutes.
C} Sift in the rice flour, custard powder, powered milk, using a spatula to mix.
D} Shift in the flour, add 2 whole eggs, vanilla, pineapple flavour and when you are shift in the flour do it bit by bit and mix properly.
E} Add the liquid milk bit by bit until the dough cookie is formed
F} Take quarter of the dough and put in another bowl, add in the colour
G} Kneed it properly and add flour as needed
H} Knead the mixture for 5-10 minutes. Now shape the coloured dough into small balls and set aside
I} Now divide the rest of the dough equally
J} Preheat oven to 325 F and line baking sheet with parchment paper.
K} Roll the dough in between the cling film, flatten like a coin. Cut the cookies using a round cookie cutter of 68 mm, now take one disc, wrap in the pink dough as seen in the video, make sure your cookies are well wrapped. Repair any cracks on the edges and place on baking sheet.
L} Using the curve of a small teaspoon make overlapping arch-shaped indentation marks on the top. Make sure to see the pink colour in the inside as seen in the video.
M} Put a small coloured dough on top of every cookies, but dump the place first using water or milk and use a small brush t{he middle. On top}
N} Bake for 20-25 minutes until the bottom and edges begins to turn a light golden colour or until is well baked
O} Let completely cool before carefully removing from baking tray and transfer them to the cooling wire until completely cold
P} Your cookies are ready, save with cold or hot drink, or just as a snack
Q} The rest of cookies store them in an airtight container
