Simple Okra Stew Recipe

Ingredients:

400g okra, trimmed both ends, washed, ( sliced into 3cm pieces if preferably)

1/2 tin or cup tomatoes, diced

1 medium onion, sliced

1/2 to 1 teaspoon chilli powder or to taste or you can use fresh

1 Maggi cube

1/2 teaspoon ginger paste

1/2 teaspoon garlic paste

Salt to taste

1/2 cup water

5 tablespoon olive

Method:

A} Heat a pot or large wok or frying pan over a medium heat.

B} Add the oil, then the onions, cook until soft.

C} Stir in the ginger and garlic

D} Add all spices and salt, stir really well

E} Add the tomatoes and Mix well, cook it for about 2 to 3 minutes or until well cook

F} Now add okra and keep stirring gently, taking care not to break up the okra. Okra releases a sticky substance when cooked, but keep cooking, stirring gently; this will disappear and the tomatoes will become pulpy, this will take about 2 to 4 minutes if you are using frozen and and soft okra, but if you are using fresh and hard okra it may take up to 7 minutes to 10 minutes on a low heat

G} Add 1/2 cup water, stir well and cover it, let simmer for another 4-5 mins

H} Serve with ugali or basmati rice or chapati bread etc
