Simple Way Of Cooking Ugali



serves 2 people

2 cups water
Approx. 1 cup finely ground maize meal or cornmeal (White one)
If you want big ugali, then increase the quantity of ingredients

A} Heat 2 cups of water in a sturdy pan over high heat, and bring it to boil.

B} After a few minutes, when the water is hot, take a 1/2 cup of cold water and put it in a bowl

C} Add about for tablespoons and mix it well. Make sure there are no lumps of flour

D} Add that mixture into a pot of boiled water, stir it well until is nice and thick like a porridge

E} Cover the pot and cook it for about 5 minutes

F} Now start to gradually add your maize meal flour / cornmeal flour a little bit at a time whilst
stirring with a wooden spoon avoid forming lumps, break them down with the spoon as soon as they form. Keep the heat on medium to low. Keep gradually adding a bit of maize meal at a time whilst stirring continuously. It will thicken the more you add the maize meal flour. If you stop stirring, lumps will form and that wouldn’t taste great.

G} Keep on stirring and stirring until it’s the consistency is a bit thicker than of mashed potatoes. Make sure is thick but not solid. This should take anywhere between 5-8 minutes depending on the heat you were making it at. You might not need to use up all the maize meal, stop adding when you find the consistency is right (you should be able to easily turn the wooden spoon and stir). Cover the pot and cook for few more minutes, between 3 to 5 minutes on a low heat

H} Serve your ugali immediately while still hot, with curry / stew and vegetables of your choice. You can also serve your ugali with grilled dishes like chicken, fish, vegetable, salad etc.
