Ingredients:
500 g to 600 g Spinach {you can use frozen or fresh, if you are using fresh one make sure to chop it nicely}
1 small onion, well chopped
2 medium tomatoes, chopped
3 tablespoons groundnuts / peanut flour
Coconut to taste {you can use coconut power or milk or cream}
Salt to taste
Chilli powder to taste {optional}
1 teaspoon ginger and garlic paste
1 to 2 tablespoons oil
50 ml water
Method:
A} Cut your spinach into fine strips.
B} Heat oil in pan, onion and fry it for about a minute or so
C} Add in tomato, stir and cook it for 2 minutes or until there’s little liquid left
D} Add salt and chilli powder, then add the spinach and stir.
E} Add coconut and stir
F} Add a bit of water, then add peanut groundnuts / peanut flour
G} Add a bit more of water if needed, stirring until it’s not too thick. It starts off thick and then thins out.
H} Cover the pot, reduce the heat to the lowest possible mark and allow this to simmer for about 3-5 minutes.
